Slow Cooker West African Peanut Chicken Stew

Afro Fusion’s line of curries, sauces, and spices are here to make your life easier. You could just simply add an Afro Fusion sauce of your choice to any protein or vegetable and it’s going to be delicious. Basically these versatile sauces can go with anything you can dream up.
serves 4

Ingredients

2 pounds chicken thighs
Cooking oil
1 large onion, sliced in half moons
4 cloves garlic, minced
1-2 pounds sweet potato, cubed
1 jar Afro Fusion Mafe Peanut Sauce
1 14-oz. can coconut milk
Cilantro
Cayenne to taste
Salt and pepper to taste

Slow Cooker West African Peanut Chicken Stew

Directions

1. Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Cook chicken until well browned on both sides. Remove chicken from pan and place in slow cooker.
2. Add onions, garlic, and sweet potatoes to the pan the chicken was in and sauté until soft. About five to ten minutes. Add one jar of Afro Fusion Mafe sauce to pan and stir to combine. Add coconut milk to pan and combine. Add a dash or more of cayenne depending on how spicy you like it.
3. Pour mixture over chicken in slow cooker.
4. Cover and cook on low heat for 5 to 6 hours.
5. Serve over rice with chopped cilantro.
