Nut-Butter Stuffed Dates
These super snacks are a snap to make, contain no refined sugars, and are loaded with healthy carbs and protein. Make a bunch and keep them in the fridge for up to a week. Just grab 'n' go! We use Medjool dates as they are larger, softer, and are much easier to stuff. Find them in the refrigerated section in the produce department at Outpost.
8 Medjool dates
Jar of your favorite nut butter
Special add-ons like mini-chocolate chips, flaked sea salt, coconut shreds, extra chopped nuts, raisins, etc. - the sky is the limit
To make:
- Make a cut along the length of one side of a date. Remove the pit from the inside.
- Using a teaspoon, scoop some of nut butter and add it to the center of the date. Sprinkle on the toppings if you so desire. Keep in an airtight container in the fridge.
