Vegetarian Chorizo and Sweet Potato Chili

A little smokey and a little spicy, we love this topped with avocado, green onions and a little squeeze of lime. Not sure about seitan? This can easily be made without or for meat eaters, a couple links of Outpost’s Chicken Chorizo substituted (casings removed).
serves 4 to 6

Ingredients

1 tablespoon olive oil
1 yellow onion, diced
2 teaspoons minced garlic
Salt and pepper to taste
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons smoked paprika
2 sweet potatoes, diced
2 15-oz.cans black beans (do not drain or rinse)
1 28-oz. can diced tomatoes (do not drain)
1 14.5-oz. can tomato sauce
1 cup beer, IPA or amber beer (or substitute vegetable stock)
1 tablespoon honey (optional)
1 package Upton’s Naturals Chorizo Seitan
For serving: shredded cheese, avocado, sour cream, green onions, cilantro, lime wedge, hot sauce, and tortilla chips

Vegetarian Chorizo and Sweet Potato Chili

Directions

1. Heat olive oil in large pot. Add onion, garlic, salt and pepper. Cook and stir until onion is golden. Stir in chili powder, cumin, and smoked paprika.
2. Add sweet potatoes, beans, tomatoes, tomato sauce, beer, and honey.
3. Cover and cook 10 minutes, add Upton’s Chorizo. Continue cooking until potatoes are tender - about 20 more minutes over medium heat.
4. Serve warm with your favorite chili toppings.
