We made our sauce even scarier and deeply red colored by adding 3 medium red beets, steamed then pureed in a blender and stirred into the sauce.  
about 24 meatballs

Ingredients

1 pound ground beef
1/2 pound ground pork or pork sausage (we used pork breakfast sausage)
2 tablespoons olive oil
1 small onion, minced
3 cloves garlic, minced
1 teaspoon dried oregano
1 large egg
1/2 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1 jar green olives with pimentos

Directions

1. Pre-heat oven to 350°.
2. Heat olive oil in a Dutch oven or large pot, add onion and sauté until golden.
3. In a large mixing bowl, combine meat, garlic, oregano, egg, breadcrumbs, salt and pepper.
4. Remove onions from heat (but leave your pot on the heat), let cool. Add to mixing bowl and get in there with your hands and smoosh everything gently until combined.
5. Form golf ball sized meatballs and place into your hot Dutch oven. Lightly brown on all sides.
6. Remove from pot and arrange on a cookie sheet with raised sides (to keep the juices from dripping everywhere). When the meatballs have cooled slightly, use your finger to make an indentation big enough for your olives and place one olive into the space.
7. Re-form the meatball around the olive so it fits snugly.
8. Bake in oven for 20-25 minutes until cooked through.
Serve nestled in your favorite pasta with your favorite red sauce. Make sure the olives are pointing up to look like monster eyes peeking from the pasta.
