Soba Noodles in Dashi Broth

This is a very simple, classic Japanese recipe: Toothsome buckwheat noodles in a clear dashi broth seasoned lightly with soy sauce and mirin. This tasty bowl of noodles is “comfort in a bowl” that can be whipped up in minutes.

Ingredients

8 ounces any type of Eden soba noodles

4 cups water

2 tablespoons Eden mirin

4-inch piece Eden kombu

1/2 cups sliced shiitake mushrooms

1-1/2 tablespoons Eden shoyu, or to taste

2 tablespoons Eden gomasio

1/4 cup scallions, sliced

Directions

1.     Cook pasta per package directions, rinse, drain and set aside. Place 4 cups water, mirin, kombu, and shiitake in a medium saucepan. Cover and bring to a boil. Reduce heat to medium-low and simmer 4 to 5 minutes. Remove kombu, set aside for soup stock or discard. Cover pan and simmer 10 minutes. Reduce the heat to low, add shoyu, and simmer 2 minutes.

2.     Place the cooked soba in serving bowls, ladle the 
hot broth over, and garnish each with gomasio and scallions.
