Braised Apple & Cabbage

This is an easy dish that goes with just about anything. From a good sausage to pork chops or just as a delicious side on its own. Perfect for a crisp autumn day.
4-6 servings


2 garlic cloves, smashed
3 tablespoons unsalted butter
2 pounds red cabbage, cored and cut into 1 1/2-inch pieces
1 apple, cored and cut into 1/2-inch cubes
1/2 cup unfiltered apple cider
2 whole allspice, crushed (optional)
1 1/2 tablespoons apple-cider vinegar

1. Cook garlic in butter in a 12-inch heavy skillet over medium heat, stirring, 1 minute.
2. Add cabbage, apple, cider, allspice (if using), 1 teaspoon salt, and ½ teaspoon pepper and cook, covered, stirring occasionally, until cabbage is tender, 15 to 18 minutes.
3. Add vinegar and cook, uncovered, stirring occasionally, until liquid has evaporated, 2-3 minutes. Season with salt and pepper.
