Great Harvest Thai Chicken Pizza

Ingredients

Pizza Crust
1 Great Harvest pizza crust
Sauce
¼ cup smooth natural peanut butter

3 tablespoons water

2 teaspoons reduced-sodium soy sauce

2 teaspoons rice vinegar

2 teaspoons minced fresh ginger

1 clove garlic, minced (or use prepared peanut sauce)
Toppings

1 cooked, boneless, skinless chicken breast, shredded

1 red bell pepper, diced

4 scallions, thinly sliced

2⁄3 cup shredded part-skim mozzarella cheese
¾ cup fresh bean sprouts
¼ cup cilantro, chopped
Optional: Peanuts to taste, chopped

Great Harvest Thai Chicken Pizza

Directions

1. Place oven rack in the lowest position; preheat to 425°F. Coat a large baking sheet or pizza screen with cooking spray.
2. If making your own sauce – whisk peanut butter, water, soy sauce, vinegar, ginger and garlic in a small bowl until well combined.
3. Top Great Harvest pizza crust with peanut sauce, shredded chicken, red pepper, scallions and cheese.  Bake at 425°F. for about 8 to 10 minutes until done. Immediately top with fresh bean sprouts, peanuts if desired and cilantro while still hot.
