Sustainably grown, agrochemical-free, planted and harvested with the help of four generations of a Hmong family at the Mequon Nature Preserve this Southern Russian rice variety was hand selected by Marquette University Professor Michael Schläppi to thrive in Wisconsin’s cold climate. This is a short, brown rice that cooks up similarly to other brown rice varieties. Recommended cooking instructions are 1-1/2 cups water to 1 cup rice, simmer for about 45 minutes. Like other short grain varieties, the additional starch in this rice makes it extra sticky and creamy (it’s great for risotto).
