Vegan Puerto Rican Beans with Beyond Sausage

These Puerto Rican beans are a quick, easy and comforting staple in a hearty tomato sauce packed with flavor. Add some nice rice on the side and dinner is served.
serves 6


1 tablespoon olive oil

3 tablespoons salsa

4 Beyond Sausages (either Sweet or Hot Italian) casings removed

12 Spanish green olives

1 6-ounce can tomato sauce

2 whole bay leaves

1 teaspoon Better Than Bouillon seasoning 
(Chicken or Vegetarian base)

2 tablespoons homemade seasoning (see below)

1 15-ounce can pink beans, drained and rinsed

2 small waxy potatoes, diced

Salt and pepper to taste

Homemade seasoning

1 tablespoon ground coriander

1 tablespoon ground cumin

1 tablespoon ground achiote or turmeric

1 tablespoon garlic powder

1 tablespoon kosher salt

2 teaspoons oregano

1 teaspoon ground black pepper

Vegan Puerto Rican Beans with Beyond Sausage

1.  In a large pan, heat olive oil over medium heat and add salsa. It may sizzle. Cook about one minute or until fragrant.

2.  Add sausage and sauté for 5 minutes.

3.  Add olives and seasoning mix, tomato sauce, Better Than Bouillon and bay leaves and stir until well combined.

4.  Add pink beans, potatoes, 1 cup of water and stir until well combined.

5.  Raise the heat and bring the beans to a boil. Lower the heat to a simmer.

6.  Cover and simmer for 20-30 minutes or until potatoes are tender.

7.  Add salt and pepper to taste.
