Traditional Irish Stew with Guinness

For a real Irish country touch, include peaerl barley - cook one cup for 20 minutes in 3 cups of lam or beef stock, then add it when you return the meat to the pot with the vegetables. Serve with plenty of Irish brown or white soda bread and a frothy pint!

Ingredients

2 tablespoons fresh parsley, chopped

4 parsley stems

1 bunch fresh  rosemary

1 bunch fresh thyme

3 pounds lamb, cubed (any cut will do)

3 tablespoons olive oil

1/2 cup flour

2 large yellow onions, cut into large dice

3 - 4 cloves garlic, minced

3 large carrots, peeled and sliced

6 stalks celery, cut into 1/2 inch slices

12 ounces Guinness Irish Stout

3 large russet potatotes, peeled and cubed

2 quarts low-sodium beef stock, or as needed

1 cup pearl barley (optional)

2 teaspoons cornstarch

4 tablespoons water

Salt and freshly ground black pepper, to taste

Directions

  1. Tie parsley stems into a bundle along with a few sprigs of rosemary and thyme; set aside.
  2. In a large stock pot, brown the meat in olive oil on medium high heat. Remove meat and sprinkle with flour, shaking off any excess, and set aside. In the same pot, add the onions, garlic, carrots and celery and saute for three minutes, tossing to coat with the fat. Add the Guinness to deglaze the pan, scraping up any caramelized meat bits and juices.
  3. Add the potatoes. Return the meat to the pot (and the barley if you're using it). Add enough stock to cover and bring to a boil. Reduce heat to very low, cover the pot and simmer 2 - 3 hours, until the meat is tender. Stir occasionally.
  4. Check seasonings and add salt and pepper to taste, then remove pot from heat. Remove herb bundles and discard. Add reserved chopped parsley leaves. Dissolve cornstarch in water and add, stirring until thickened. Serve hot.
