This salad is a great meal when it’s too hot to even heat up the toaster and the tomatoes are fresh from the vine. We love the Bolthouse brand Ranch dressing – look for it in the refrigerated section of produce –but any Ranch dressing will work.
serves 1

Ingredients

2 cups mixed green salad mix with romaine
1 handful of grape tomatoes sliced in half, or 1 medium tomato, chopped
1/2 cup turkey breast lunch meat, chopped
2 pieces crisp bacon, chopped
1/2 avocado, sliced
2-3 tablespoons of your favorite Ranch dressing
1 teaspoon cilantro or parsley, chopped
1 handful of croutons or baguette slices on the side

Directions

1. Add greens to a bowl and top with tomatoes, turkey and bacon. Then add avocado and drizzle dressing over the salad.
3. Garnish with chopped cilantro or parsley and croutons, if using. A nice sliced baguette is also delicious served alongside this slice of summer.
