North by South Wild Rice Salad

Studded with pistachios and mangoes, this rice salad is great for a unique side or a meal unto itself. The creamy dressing coupled with the nuts, fruit and rice makes it a chewy and crunchy delight.  
serves 4

Ingredients

1 cup wild rice

1/3 cup pepitas (or pistachios), divided

1 cup sunflower sprouts (or other sprouts), divided

1/2 cup chopped cilantro or parsley

1 ripe mango, peeled and chopped

Diced avocado (optional)

For the dressing:

1 ripe avocado, pitted and peeled

3 tablespoons olive oil

Juice of 1/2 lemon

1 teaspoon apple cider vinegar

1 teaspoon kosher salt

A few grinds of black pepper

1/4 cup Greek yogurt

Directions

Prepare wild rice; cool, and combine with half the pepitas and sprouts, mango, and cilantro.
Process ingredients until smooth. Fold dressing into wild rice mixture. Top with remaining pepitas and sprouts, and additional avocado if desired.
