August Harvest Salad

This is our take on the classic Shopska salad from Serbia, featuring the darlings of August in Wisconsin: tomatoes and peppers. Serve this atop romaine lettuce or your favorite grain.
serves 2

Ingredients

1/2 large cucumber, chopped
2 medium tomatoes, chopped
1/2 medium bell pepper, finely diced
1 small white or yellow onion, finely diced
1 tablespoon olive or sunflower oil
1 teaspoon white or apple cider vinegar
1/4 cup feta, crumbled or shredded on box grater
Salt and black pepper to taste

Directions

1. On a serving dish, assemble chopped cucumber for the bottom layer.
2. In a bowl, gently combine the tomatoes, bell pepper, onion, oil, and vinegar. Season with salt and pepper to taste.
3. Sprinkle the top with the crumbled feta and serve.
