Sirloin Tip Ropa Vieja

Ropa Vieja is known as one of the national dishes of Cuba. It 
originated in Spain and is popular in other parts of Latin America as well as the Philippines. A sirloin tip roast is great in this dish – it’s flavorful, but like most lean cuts, it shines when braised or stewed slowly. This is why it works so well in the slow cooker! We like it served with rice or fried plantains and black beans.

Ingredients

1 tablespoon vegetable oil

2 pounds beef sirloin tip roast

2 14-ounce cans fire-roasted diced tomatoes, drained

1 cup low-sodium beef broth

2 onions, sliced

3 bell peppers, seeded and sliced into strips

1 6-ounce can tomato paste

2 tablespoons garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon salt

¾ cup green olives with pimentos, halved

1 tablespoon red wine vinegar

Handful of chopped fresh cilantro plus more for garnish

Sirloin Tip Ropa Vieja

Directions

1. Heat vegetable oil in a large skillet over medium-high heat then add roast to hot pan and cook until browned on all sides, about 4 minutes per side.

2. Transfer roast to a slow cooker. Pour tomatoes and beef broth over roast and add onions and bell peppers.

3. In a small bowl mix together tomato paste, garlic, olive oil, cumin and salt, then add to slow cooker. 

4. Cook on high for 1 hour. Decrease heat to low and cook until beef is tender enough to shred, about 8 hours.

5. Remove beef from slow cooker and shred on a work surface 
using 2 forks. Return shredded beef to slow cooker; add 
vinegar and cilantro and mix well. 

6. Cook on low for 1 hour more. Stir in sliced olives before serving and garnish with more cilantro.
