Hot Sausage German Potato Salad

Break out the lederhosen and dirndls. This version of German potato salad is simply wunderbar!
serves 4-6

Ingredients

3 strips turkey bacon
2 tablespoons olive oil
1 onion, chopped
3 tablespoons flour
½ teaspoon salt
½ teaspoon celery seed
¾ cup apple cider vinegar
1 cup water
½ cup sugar
2 Outpost's Own Polish sausages, cooked and cut into ½-inch slices
6 cups red potatoes, cooked, peeled, sliced
¼ cup Italian parsley, chopped
Freshly ground black pepper to taste

Hot Sausage German Potato Salad

Directions

  1. Cook bacon in large sauté pan until crisp. Remove from pan, crumble and set aside.
  2. Add olive oil to same pan and sauté onion until tender. Stir in the flour, salt and celery seed, cook and stir for one minute. Add sugar, water and vinegar; bring to a boil. Boil for 2 minutes. Set aside.
  3. In large bowl combine potatoes, sausage and parsley. Pour vinegar mixture over potatoes and sausage and stir gently to coat. Sprinkle with bacon. Serve warm.

Per serving: 306 calories, 10g fat, 2g sat gat, 50g carbohydrates, 6g protein, 485mg sodium, 3g fiber
