Rhubarb Apple Pie

Rhubarb is one of those old-world fruits that will never go out of style. Grandma might refer to it as pie-plant. Pair with a lovely Reisling or a fruity port. A perfect little duo for backyard star gazing.
makes 1 pie

Ingredients

Pastry for 9-inch double crust pie
1 1/2 cups sugar
1/4 cup cornstarch
Pinch salt
1 teaspoon cinnamon
3 cups fresh rhubarb, cut in 1-inch pieces
2 large tart apples, pared, cored and chunked
2 tablespoons butter
1 teaspoon vanilla
Milk or egg wash (optional)

Rhubarb Apple Pie

Directions

Step 1
Preheat oven to 400 degrees.
Step 2
Combine sugar, cornstarch, salt and cinnamon. Toss with rhubarb and apples until well mixed. Let stand 15 to 20 minutes. Add vanilla and mix well.
Step 3
Pour into pastry-lined 9-inch pie plate, dot with butter and cover with the top crust or lattice top; seal. Brush top with milk or egg wash if desired, and sprinkle with a bit of cinnamon sugar.
Step 4
Bake for about 55 to 60 minutes, or until crust is golden brown.
