Chocolate Adzuki Bean Cake

Cake made from beans … say what? Yep, this deceptively delicious dessert is naturally gluten free (there’s no flour used in this recipe) and can be made with any mild-flavored, darker colored bean. Super chocolaty, dense and moist, it’s a cross between a cake, brownie, and fudge. We tricked everyone from picky kids to skeptical grown-ups into trying a bite. No one guessed it was bean cake. Definitely one of our new favorites!
makes 8-10 servings

Ingredients

1 cup cooked adzuki beans, rinsed and cooled

3 tablespoons chia seeds

6 tablespoons almond milk

2 eggs

3 tablespoons melted coconut oil

½ cup cocoa powder

½ teaspoon baking powder

1 pinch salt

2 teaspoons ground cinnamon

1 teaspoon vanilla

¾ cup sugar

½ cup milk chocolate chips

Chocolate Adzuki Bean Cake

Directions

1.In a small bowl, combine chia seeds and almond milk. Stir well and let sit for about 10 minutes, stirring now and then until the seeds gel. Preheat oven to 350 degrees and lightly grease 8 x 8 baking dish.

2.After chia seeds have gelled, combine everything but chocolate chips in a blender and process until very smooth and well combined. Add a splash or two of almond milk if your mixture is dry.

3.Pour batter into the prepared baking dish and sprinkle the chocolate chips over the top.

4.Bake about 30 minutes or until the top is dry and edges start to pull away from the sides of the pan and a toothpick inserted in the center of the cake comes out clean.

5.Frost if desired or enjoy as is.
