Freeze Your Breakfast Burrito

These delicious breakfast burritos, made ahead of time and frozen, are great to have in your back pocket for a quick weekday breakfast with little fuss, or a weekend on the go.
serves 8 to 12

Ingredients

1 pound bulk pork sausage (Outpost’s Own chorizo or breakfast sausage work great)
3 green onions, chopped
10 eggs
1 package frozen tater tots
1 tablespoon butter
8 to 12 8-inch flour tortillas (Try local tortillas from Gitto Farm n Kitchen)
1 cup shredded Cheddar cheese
Salsa and sour cream to serve

Freeze Your Breakfast Burrito

Directions

1.    Cook half the bag of tater tots in the oven according to cooking instructions on bag
2.    In 10-inch skillet, cook pork sausage over medium-high heat until no longer pink; drain. Stir in chopped green onions. Remove from skillet; set aside.
3.    In large bowl, beat eggs until well blended. In same skillet, melt butter. Add eggs; cook, stirring frequently, until scrambled and set. Add sausage and onions; mix gently.
4.    Spoon sausage/egg mixture evenly onto each tortilla. Sprinkle each with 2 tablespoons cheese. Add 4 to 5 cooked tater tots. (Optional: sprinkle in your favorite hot sauce) Fold in sides of each tortilla; roll up to make burritos. Wrap each in foil and place in freezer. Freeze for 8 hours or overnight.
5.    Night before use, place burritos in refrigerator to thaw. Next morning, heat oven to 350 degrees. Place on cookie sheet. Bake 10 to 15 minutes or until hot. (Optional: heat a skillet with butter and fry burritos after cooking in oven to get a crispy tortilla) Serve with salsa and sour cream.
