Mexican Corn Bread

Ingredients

1 lb. cornbread mix
½ cup frozen corn kernels, thawed
2 green onions, chopped
1 large roma tomato, seeded and chopped
1 clove garlic, minced
1 jalapeño pepper, seeded and minced
½ cup grated cheddar cheese

Mexican Corn Bread

Directions

1.    Preheat oven to 400°. Spray 8-inch square pan with cooking oil spray.
2.    Prepare mix according to package directions. Set aside.
3.    Combine corn, onions, tomato, garlic, pepper and grated cheese. Add to cornbread mixture and stir well to combine.
4.    Pour into pan and bake for 20 to 25 minutes until toothpick inserted in center comes out clean and cornbread is lightly browned.

Per serving: 165 calories, 3g fat, 1g sat fat, 31g carbohydrates, 4g protein, 143mg sodium, 4g fiber
