Smoked Trout Spread

This super easy recipe requires practically no prep at all (a knife and a blender!) yet the lovely smokey flavor of the trout makes this spread a classic for any party. Serve on whole grain crackers, pita bread triangles or a toasted French baguette. Ach du lieber, bring along a chilled German Riesling white wine.
makes 1 1/2 cups

Ingredients

8 ounces smoked trout fillets
4 ounces Neufchatel low-fat cream cheese, cubed
3 tablespoons low-fat or light mayonnaise
3 tablespoons fresh dill, chopped
2 tablespoons lemon juice
1 teaspoon prepared horseradish
1/4 teaspoon black pepper, ground
2 tablespoons toasted walnuts, chopped (optional)
2 tablespoons scallions, sliced (optional)

Directions

Place all ingredients except the walnuts and scallions into a food processor and puree to smooth. Spoon into a serving bowl and garnish with walnuts or scallions.
