Smoked Trout Dip

This dip is super simple and amazingly delicious. It’s smoky, savory and surprisingly not “fishy” tasting. The horseradish adds just the right zing. It’s quick to make and improves with time in the fridge so go ahead; make it a day or two ahead!

Ingredients

10 ounces Rushing Waters smoked trout
1/2 cup cream cheese, softened
1/2 cup sour cream
1 tablespoon prepared horseradish
1 tablespoon minced red onion
1 tablespoon minced flat-leaf parsley
1/2 lemon, juiced
Celery sticks, crackers, and/or baguette slices for serving

Smoked Trout Dip

Directions

1. Skin and flake the trout fillets making sure to remove any bones.
2. Place cream cheese, sour cream, horseradish, and trout in a food processor. Puree until smooth.
3. Transfer to a bowl and stir in the onion, parsley, and lemon juice.
Refrigerate about 1 hour until dip firms up. Serve with celery, crackers and/or baguette slices.
