yield 3 - 4 cups


1/4 cup fresh lime juice

1 tablespoon canola oil

2 teaspoons fresh ginger, grated

1 fresh jalapeño, seeded and minced

1 tablespoon basil, minced

1/2 teaspoon salt

1 cup diced cantaloupe

1 cup diced honeydew

1 cup cherry tomatoes, halved

1/2 cup red or green bell pepper, diced

  1. In a large bowl, whsk together the lime juice, oil, ginger, jalapeño, basil and salt.
  2. Add cantaloupe, honeydew, tomatoes and peppers. Let sit for 20 minutes  to blend the flavors.
  3. Store in the refrigerator. Serve at room temperature.
