It all started with an asparagus sale. Phil and Jeanne Esche always loved to pickle vegetables and make jams but when they started pickling asparagus their friends came running. Realizing they were onto a good thing they decided to start selling at local farmers markets and the rest is history. But be warned, these are not your average, work-a-day pickled stalks of asparagus and dilly beans, they are snappy, crisp, tangy and flavorful. The Five Inch Spikes variety (not so spicy) is multi-layered with spices from marjoram to lavender, for an herbaceous flavor explosion. The Red Hot Pumps (spicy!) variety come with a fiery kick from hot peppers. These are perfect in a Bloody Mary (naturally) with eggs, tacos, on a vegetable tray or just right out of the jar.
