American palates are accustomed to the taste of old olive oil. It’s partly because many people think that olive oil is a shelf stable product. Josh Saiia is here to tell you, it is not. Olive oil slowly but steadily deteriorates the moment the olive comes off the tree.
That is why Josh considers the oil a produce item. He’s trying to get others to see things his way. Josh, along with his wife Nichol, started bottling fresh olive oil in Wauwatosa.
They named their company GODA, Italian for “enjoy,” and they select the best oils from wherever they’re the freshest and most flavorful — they’ve bottled oil from Spain, Tunisia, California, Italy, Greece, Australia, Chile and Argentina. The oils are fresh. They only come from the current year’s harvest and aren’t bottled until stores order it.
“It is our goal to keep the quality high and we rely on our customers taste buds to help us maintain that standard.” In addition to bottling olive oils, GODA bottles “high density” balsamic vinegars — balsamic is a reduced vinegar and these are reduced significantly more to produce a richer and smoother vinegar.
