After 20 years, Greg Gitto decided he wanted to do something different. He and his wife, Carol, wanted to farm.They also wanted to raise their family by working together. So, they sold their home in Waukesha County and moved to Jackson County, where they started learning the ropes.

Neither Greg nor Carol had any farming experience. They learned by doing, first on other people’s farms. They started dairy farming in 2000 and four years later started raising vegetables. Greg and Carol eventually settled on their own farm, between Watertown and Lake Mills, where they milk cows and raise certified organic vegetables.

In 2011, Greg and Carol leased a licensed kitchen and started making tortillas to sell at farmers markets alongside their vegetables. Gitto Family Farms is truly a family operation. Eight of Greg and Carol’s ten children still live at home and they all do their part.

The couple still gets some help from their two sons and their wives. Greg and Carol are perfecting their tortilla-making process. At this point, it’s very labor intensive doing everything by hand. They hope to get more efficient equipment and eventually open their own kitchen on the farm.
