Growing up in tiny Rockbridge, Wis., Kevin Everhart lived above a cheese factory. Everhart’s dad, Frank, managed the factory in the tiny town north of Richland Center.
So, it seemed natural for Kevin to get into the cheese business, just like his dad. Kevin now runs K & K Cheese in Cashton, Wis., a small town in the Coulee Region near La Crosse. He bought the plant from his brother.
Kevin and his wife, Kim, also own their own cheese company, Pasture Pride, produces traditional cheeses like Wisconsin cheddar, mild & sharp; Muenster, Colby and pepper jack, and a baked cheese called Juusto.
The Everharts work with several licensed cheesemakers. Pasture Pride cheese is made with milk produced by a cooperative of 360 Amish farmers. The farmers own small herds, an average of 12 cows each, that are pastured every day and hand milked. The milk is farmer certified rBGH-free.
