Farm Fresh Summer Gazpacho

We love the flavors of fresh summer produce and it’s rolling in these days. With the exception of a few ingredients, everything in this gazpacho recipe can be found growing right here in Wisconsin and our local growers are shipping it to us weekly. Right about now, we’re stocking fresh produce from our friends at Blue Fortune Farm, JenEhr Family Farm, Tipi Produce, and Central Greens. It doesn’t get more local than that. Oh, and it doesn’t get much easier than this gazpacho recipe.  
serves 4

Ingredients

2 pounds tomatoes, roughly chopped
1-2 cloves garlic, roughly chopped
1 large cucumber, peeled, seeded, and roughly chopped
1 medium green pepper, roughly chopped
1 small red onion, roughly chopped
1 jalapeño, seeded and roughly chopped
1 cup crushed ice
2-3 tablespoons olive oil
2-3 tablespoons apple cider vinegar
Salt and pepper to taste
2-4 avocados, diced

Farm Fresh Summer Gazpacho

Directions

1. Puree tomatoes and garlic then place in a large bowl.
2. Combine cucumbers, peppers, basil, onion, and crushed ice in the blender and puree to a slightly chunky texture. Add to tomato mixture. Stir in oil and vinegar.
3. Season with salt and pepper, refrigerate for about 30 minutes (until chilled).
4. Add diced avocados just before serving.

Per serving: 139 calories, 8g fat, 1g sat fat, 18g carbohydrates, 3g protein, 24mg sodium, 4g fiber
