Irish Stout Beef Stew

Graze editor Malcolm McDowell Woods shares an old family recipe: a thick, hearty Irish stew helped along by a cup of stout. His mother’s tip: each time you add an ingredient, turn the heat to medium high for 10 minutes and then reduce to low for a half hour or so.  
serves 10

Ingredients

1 medium onion, peeled and diced
1 tablespoon canola oil
3 lbs. stew meat – cut into 1-2 inch cubes
1 bottle stout beer
2 cups beef broth (I use Organic Better Than Bouillon beef base)
2 lbs. carrots, peeled and sliced
1 rutabaga, peeled and cut into 1-inch cubes
3 lbs. potatoes cut into 2-inch cubes
salt and pepper to taste

Irish Stout Beef Stew

Directions

1. Add onion and canola oil to large stock pot and sauté onions over medium heat.
2. Add stew meat and stir until evenly browned, about 15 minutes.
3. Pour two thirds (about 1 cup) of the stout over the meat. Drink remainder. Turn to medium high for 10 minutes.
4. Add the beef broth. Reduce to low for half hour.
5. Add rutabaga, turn heat to medium high for 5 minutes, then reduce to low for half hour.
6. Add carrots, turn to medium high for 10 minutes, then reduce heat to low for half hour.
7. Add potatoes, turn to medium high for 10 minutes, then reduce to low for an hour. Add water if liquid gets too thick.
8. Serve in bowls. Add salt and pepper to taste.
