3-Meat Chili

Ingredients

8 strips bacon

1 pound ground chorizo

1 pound extra lean ground beef

1/2 tablespoon olive oil

2 cups onion, chopped

1 green pepper, chopped

4 cloves garlic, chopped

2 stalks celery, chopped

1 tablespoon dried oregano

2 teaspoons cumin

3/4 teaspoon crushed red pepper

1/4 teaspoon cayenne pepper

1 28-ounce can chunky tomato sauce

2 bay leaves

1 cup low-sodium beef/chicken broth

1 cup water

1 15-ounce can chili beans

Salt and freshly ground black pepper to taste

Low-fat sour cream or Greek yogurt (optional)

Avocado, diced (optional)

Grated cheddar cheese (optional)

Directions

  1. Cook bacon, drain and set aside to cool; chop.
  2. In a large bowl, combine beef and chorizo with your hands.
  3. Heat oil in a large pot, add chorizo/beef mixture and brown evenly over medium -high heat. Add onion, green pepper, garlic and celery. Mix well and heat for a few minutes. Add spices and mix for 30 seconds.
  4. Add tomato sauce, bay leaves, broth and water. Bring to a boil and simmer for 20 minutes.
  5. Add beans and bacon and simmer for 10 minute more. Remove bay leaves and season with salt and freshly ground black pepper to taste. Garnish if desired.
