In honor of National Grilled Cheese Day on April 12, we’re fancying up this classic sandwich with crispy bacon and rich, creamy avocado slices. Three-year Heritage Weis Reserve Old World White Cheddar from our friends at Red Barn Family Farms completes the package.
makes one sandwich


2 slices sour dough bread
2 pieces bacon (use turkey or veggie bacon if you please)
1 tablespoon butter
2 ounces Red Barn Old World White Cheddar cheese, sliced into 4 pieces
1/2 avocado, sliced or mashed

Bacon Avocado Grilled Cheese

1. Cook your bacon until crispy, set aside to drain.
2. Spread butter on both outer sides of bread, lay one slice of bread in your pan over medium heat and add two slices of cheese, avocado and bacon.
3. Top with remaining cheese and second slice of bread.
4. Grill until golden brown, flip carefully and grill other side.
