Cucumber Avocado Salad

Ingredients

2 medium size cucumbers (between 14-16 ounces)
1 avocado
1/2 cup red pepper, diced
1/4 cup fresh chives, chopped
1/2 cup frozen edamame (sweet) beans
Dressing
5 tablespoons Liberté Mediterranean-style yogurt
1 tablespoon lemon juice
1 tablespoon fresh cilantro, chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon Sriracha sauce

Cucumber Avocado Salad

Directions

1. Peel cucumbers. Remove seeds with a spoon and discard. Chop into small pieces.
2. Remove skin and seed from avocado, chop into small pieces.
3. Chop red pepper and chives.
4. Combine peeled, seeded, and chopped cucumber with chopped avocado, red pepper, chives, and edamame beans.
5. Make dressing by whisking together yogurt, lemon juice, cilantro, salt, pepper, and Sriracha sauce.
6. Add dressings to vegetables and toss to combine.
