Salad and Dressing
1. Combine corn, bell pepper, onion, black beans, tomatoes, avocado, cilantro and greens in a large bowl and set aside.
2. Mix garlic, lime juice and zest, chili powder, cumin, hot sauce and olive oil in a small bowl and whisk until blended. Combine dressing and salad ingredients and toss to coat evenly. Salt and pepper to taste. Divide among 4 plates.
Catfish fillets
1. Combine oil, vinegar and seasoning and brush onto fillets.
2. Heat a large skillet over medium-high heat and add fillets. Cook 3 to 4 minutes, flip over and cook for about 3 minutes more. Remove from heat. Serve over Black Bean Salad.
