2 tablespoons brown sugar
1 tablespoon chili powder
1 teaspoon pepper
½ tablespoon cumin
½ tablespoon paprika
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon cinnamon
1 tablespoon olive oil
2 4-ounce salmon fillets
1. Combine the first 8 ingredients and mix well to combine.
2. Coat top half of salmon fillet with the rub.
3. Heat oil in sauté pan over medium high heat and cook salmon, skin side down, for 3 minutes. Lower heat and turn salmon over. Cook for an additional 6 to 8 minutes until salmon is done.
