Vegetable Stir Fry

Having frozen vegetables on hand is the best way to ensure a quick, healthy dinner - any night of the week!
serves 4


1 cup brown rice

2 tablespoons olive oil

1 16-ounce bag frozen stir-fry vegetables, thawed

4 green onions, thinly sliced

¼ cup San-J stir fry sauce

Freshly ground pepper to taste

  1. Bring 4 cups water to a simmer in a medium saucepan. Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes. Drain and set aside.
  2. Over medium-high heat, stir fry the vegetables in olive oil for 3-5 minutes. Add the green onions and sauce and stir-fry for another minute or two.
  3. Serve over rice and season freshly ground pepper.
