Turmeric Lemongrass Marinade

Here is a lovely blend of Southeast Asian flavors that will pair nicely with chicken, pork, fish or tofu. Please use the fresh turmeric root that we are now featuring in our produce department.  

Ingredients

1 can unsweetened coconut milk
3 shallots
3 large garlic cloves
2 lemongrass stalks (bottom third only, tough outer layers removed)
2 jalapeños, stems removed and seeds optionally removed
1 1-inch piece fresh ginger
1 1-inch piece fresh turmeric
3 tablespoons fresh lime juice
2 tablespoons soy sauce
2 tablespoons honey
2 teaspoons kosher salt
Freshly ground pepper to taste
Freshly chopped cilantro (for a garnish)

Turmeric Lemongrass Marinade

Directions

1. Combine all of the ingredients except the cilantro in a blender or food processor and blend until you have a smooth marinade.
2. Marinate 2-3 pounds of meat or tofu for about 2 hours in the fridge.
     a. Roast chicken drums/thighs for 30-40 minutes at 375°.
     b. Grill pork chops for about 10 minutes each side.
     c. Press and bake tofu at 350° for 20-40 minutes (the longer you bake it, the chewier it will be).
3. If there is any marinade left over, heat on a low simmer on the stovetop for 15-20 minutes and serve with your main dish.
4. Garnish with fresh cilantro and serve over rice with a side of sautéed greens (kale, mustard and chard taste lovely together).
