Greens and Eggs

A very healthy, easy and quick meal. Any vegetable can be added along with a topping of feta cheese.  
serves 2

Ingredients

1 tablespoon olive or canola oil
1 bunch kale or collards, large stems removed
4 large eggs, mixed together
1 large onion
1 clove garlic, chopped
1/2 tablespoon soy sauce or tamari

Directions

1. In a large frying pan over medium heat add onion and garlic, cook until onion is soft (about 4 minutes).
2. Add greens and cook for about 3 more minutes.
3. Push greens to the sides of the pan to make a space in the middle.
4. Pour eggs into pan, cook and stir until eggs are done and not runny.

Per serving: 208 calories, 15g fat, 3g sat fat, 9g carbohydrates, 12g protein, 296mg sodium, 2g fiber
