makes 16 scones


1 1⁄2 cups oat bran
1 1⁄2 cups all-purpose flour
1⁄4 cup light brown sugar
1 teaspoon baking soda
1⁄4 cup butter
2 eggs
1⁄4 cup honey
1⁄3 cup buttermilk
1⁄2 teaspoon pure vanilla extract
1 pint fresh blueberries

Oat & Blueberry Scones

  1. Preheat oven to 400 degrees and lightly grease one baking sheet.
  2. Mix oat bran, flour, brown sugar and baking soda and cut in butter.
  3. Beat eggs and beat in honey. Add buttermilk and vanilla to egg mixture.
  4. Pour into oat bran mixture and stir only until moistened.
  5. Stir in blueberries and drop by the tablespoon onto a baking sheet.
  6. Bake in a 400 degree oven 25 to 30 minutes and serve warm.
