Blackened Catfish

Mardi Gras is not the only time to enjoy this flavorful recipe, but we recommend serving it on Fat Tuesday.  
makes 4, 6-ounce fil

Ingredients

4 6-ounce catfish fillets
4 tablespoons Cajun seasoning (we recommend using Lionheart Bourbon Street Spice Mix)
Oil or butter

Directions

1. Brush both sides of each fillet with oil or butter. Rub in the seasoning (about 1/2 tablespoon per side). The fillets should be thoroughly coated.
2. Heat a heavy skillet over high heat. Add oil or melted butter. Cook the catfish for about 2-3 minutes per side – until the fish flakes.
3. Serve immediately with rice, greens or your favorite southern side dish.
